These adorable Little Mermaid cupcakes are perfect for a Little Mermaid Family movie night or an under the sea mermaid party! I love this recipe because it uses a simple boxed cake mix, regular buttercream icing, and small fondant accents.
Little Mermaid-Inspired Cupcakes
These cupcakes are so easy to make. After going to the Americas Cake Fair last year, I gained a new appreciation for fondant, especially flavored ones. If you don’t like the taste of regular fondant, you can either make marshmallow fondant or use purple candy melts for the seashells.
If you love life under the sea and Ariel is your spirit princess, then these Ariel inspired cupcakes are perfect for you! They are simple to make and kids can help make the fondant shells.
Ingredients
- 12 of your favorite chocolate cupcakes (you can use any flavor of cake mix or make your own homemade ones)
- 1 stick of butter, softened
- 2 cups confectioners’ sugar
- 1 tsp vanilla extract
- 1 drop green gel food coloring
- 1 drop blue gel food coloring
- 1 cup purple fondant
- Cornstarch
- Seashell molds for fondant
How to Make Little Mermaid Cupcakes
Step 1 – Prepare cupcakes and make sure your cupcakes are completely cool before you start decorating.
Step 2 – Using an electric mixer, start mixing butter, confectioners’ sugar, vanilla, and both food colorings on medium speed. These ingredients will make up your buttercream frosting. Gradually increase the mixing speed to high until it is completely smooth and tinted with your aqua blue/green color. Start with a small amount of coloring at first, and if you want a darker color, add one more drop of both colors at a time.
Step 3 – Using a piping bag, frost each cupcake.
Step 4 – Now, line a baking sheet with wax paper. Sprinkle some cornstarch on your seashell mold, and press a piece of purple fondant into each cavity. Gently ease the fondant into the mold with your fingers, and then pop it out. Place each one on your lined baking sheet until you have made 24 of them.
Step 5 – Place 2 seashells on each cupcake. Serve and enjoy!
To keep your cupcakes fresh and delicious, store them in an airtight container at room temperature. For longer storage, you can freeze unfrosted cupcakes by wrapping each one tightly in plastic wrap and placing them in a freezer-safe bag or container. When you’re ready to enjoy them, let the cupcakes thaw at room temperature before frosting and serving. This way, your cupcakes will stay moist and tasty until you’re ready to indulge!
Tips for Working with Fondant
Don’t let the fondant work in this recipe intimidate you. This recipe is super simple and the fondant work is easy. Here are some tips for success when working with fondant.
- Condition the Fondant: Knead the fondant until it’s soft and pliable. If it’s too stiff, microwave it for a few seconds to soften it.
- Avoid Cracking: If the fondant starts to crack, lightly knead in a bit of shortening until it’s smooth again.
- Smooth Edges: Use your fingers or a fondant smoother to smooth any rough edges or seams.
- Keep It Fresh: Store any leftover fondant in an airtight container to keep it from drying out. Fondant doesn’t like humidity, so store it in a cool, dry place.
- Polish with Shortening: If your fondant looks a bit dry, lightly rub a small amount of shortening over the surface for a nice finish. For these shells, you could also add some shimmering powder.
