Disney World has many great snacks but when it comes to cookies, one destination at Disney reigns supreme. Gideon’s Bakehouse located in Disney Springs, has the most amazing cookies! These huge Sprinkle Funfetti Cookies filled with white chocolate chips and sprinkles are inspired by the masterpieces Gideon’s Bakehouse bakes every day.

Let’s talk about Gideon’s for a moment. Did you know Sports Illustrated named Gideon’s one of the top ten cookies in the USA? Gideons is not your average bakery. The store itself is a destination as it is filled with strange works of art, aging books, and curious antiquities from the Victorian era. During busy times at Disney World, they revert to a virtual queue because lines can get hours long. Locals and guests alike know how delicious their 1/2 cookies are.

Gideon’s Inspired Sprinkle Funfetti Cookie Recipe

This White Chocolate Sprinkle Funfetti Cookie recipe is inspired by Gideon’s. Please be aware that you won’t get lots of cookies from this recipe. You may get 8-10 cookies since they are larger than your typical cookie.

Ingredients You Will Need for White Chocolate Sprinkle Funfetti Cookies

  • 1 cup butter, cold and sliced
  • 1 cup Brown Sugar
  • 1⁄2 cup Sugar
  • 2 eggs, room temperature
  • 1 tsp. Vanilla extract
  • 1 1⁄2 cups Flour
  • 1 1⁄2 cups Cake flour
  • 1⁄2 tsp Salt
  • 1⁄2 tsp Baking Soda
  • 2 cups White Chocolate Chips
  • Sprinkles – You will want more than the small little bottles. I have tried different types of sprinkles and regular sprinkles are best and Wilton sprinkles don’t melt in the oven.

How to Make Funfetti Cookies

  1. Preheat oven to 410 degrees.
  2. Line your baking sheets with silicone baking mat or parchment paper
  3. In the bowl of a stand mixer cream together your butter, sugar, and brown sugar. Mix for 2 minutes on medium speed. Make sure to scrape the sides to get the butter fully incorporated with the sugars.
  4. Add the eggs one at a time and vanilla extract to the butter mixture. Mix on medium speed until fully mixed.
  5. In a large separate bowl add the flour, cake flour, salt, and baking soda. Sift the flours together until fully mixed.
  6. Slowly add the flour mixture to the butter mixture 1 cup at a time.
  7. Mix on low to medium speed until the dough begins to form a ball and pulls from the sides of the mixing bowl.
  8. Remove the bowl from the stand mixer and add the white chocolate chips. Using your hands, mix the baking chips into the dough.
  9. Cover the dough with saran wrap and chill in your refrigerator for 1 hour. Chilling the dough prevents cookies from spreading out too quickly once they’re in the oven
  10. Prepare the Sprinkles: Take medium bowl and pour the sprinkles in the bowl.
  11. Use a large ice scoop and scoop out 8 even cookie dough balls. Roll the dough balls in your hands to form a ball.
  12. Place a dough ball into the sprinkles and push the sprinkles into the ball covering it entirely.
  13. Place the dough ball on the baking sheet and lightly press down on the dough ball to flatten slightly. Repeat with the remaining dough balls.
  14. Bake for 15-17 minutes. You want the dough ball to be 3⁄4 of the way fully cooked.
  15. Allow the cookies to cool for 5-10 minutes.
  16. Enjoy and imagine yourself in the middle of Disney Springs wearing your mouse ears!

Tips for Storing Leftover Cookies

Considering these are huge cookies, one cookie may be just enough or maybe even a half depending on your sweet tooth. Here are some tips for storing the cookies so they taste just as good as when you took them out of the oven.

  •  Cookies should be stored in an airtight container. While decorative cookie jars are a cute, they don’t keep cookies as fresh as they could be.
  • To further extend the lives of your soft cookies, keep a half slice of white bread in the container with the cookies. The cookies will absorb moisture from the bread, but the neutral bread won’t impart much of a scent or flavor according to Craftsy.
  • If you want to freshen up your cookies directly before serving, pop them in the oven very briefly. Two or three minutes at about 300 F should do it.
