Slow Cooker Elvis Pudding Cake

Okay, all you Lilo & Stitch fans I have the perfect dessert for you, Elvis Pudding Cake! We all know how much our friend Lilo loves Elvis and I can’t agree more. Lilo & Stitch movie night just got even better. The second this pudding cake hits your tongue, you will realize you made the best decision ever!

This cake is loaded with creamy peanut butter, ripe bananas, pudding, and chocolate chips, and topped with cold vanilla ice cream. You know that moment when you are eating a cake, and it is still warm, but the ice cream is starting to melt? Yep, this is precisely what happens, and it is absolutely scrumptious! 

Besides how incredible it tastes, I forgot to tell you the best part! It can be made right in your slow cooker. How amazing is that? It is a minimal effort with a huge reward. That is a big win in my book!

What Makes This An Elvis Pudding Cake?

If you love Elvis then you probably already know he was known for eating peanut butter and banana sandwiches. The sandwich, consisting of sliced bananas and peanut butter between two slices of bread, became one of Elvis’s all-time favorite snacks. He even had a special variation created just for him, which involved grilling the sandwich and sometimes adding bacon. This quirky food love has become a part of Elvis’s fascinating personality, and fans still marvel at his unique taste when it comes to food. This cake has been made to remember Elvis and his love for peanut butter and bananas.

What’s Needed to Make an Elvis Pudding Cake?

  • 1 – 3.5 package instant banana pudding and pie mix
  • 3 C milk
  • 1 box yellow cake mix
  • eggs (according to cake directions)
  • oil (according to cake directions)
  • water (according to cake directions)
  • 1/2 C creamy peanut butter plus 1/4 C for topping – Though natural peanut butter may be a bit healthier, I have discovered the best peanut butter for baking is cheap peanut butter like a store brand. 
  • 1 C peanut butter chips
  • 1 C semi-sweet chocolate chips
  • Chocolate sauce for drizzle
  • Banana slices for topping – you want a just-ripened banana for this recipe. The added sweetness kicks the recipe up to perfection.
  • Vanilla ice cream

Elvis Pudding Cake Recipe 

Step 1 – Spray a 6qt slow cooker pot with Pam spray. You can also use a slow cooker liner for easy cleanup!

Step 2 – Using a medium bowl, whisk together the milk and pudding mix for 2 minutes until soft. Pour soft pudding into the cooker and set aside.

Step 3 – Following the directions on the back of the cake mix box, prepare the cake batter, mixing in the 1/2 cup of creamy peanut butter. Pour the cake batter over the pudding.

Step 4 – Bake on low for 4 hours or until a toothpick comes out clean from being poked in the center. Turn the crock pot off and remove the lid.

Step 5 – Sprinkle the peanut butter chips and chocolate chips over the top and cover back up with the lid. Allow the cake to sit for 10 minutes.

Step 6 – Heat 1/4 cup of peanut butter in the microwave for 15 seconds or until melted for drizzling on the cake.

Step 7 – Time to serve! Scoop out some gooey goodness into a bowl and top with the peanut butter and chocolate sauce, sliced bananas, and vanilla ice cream. 

Tips on How to Make this Cake Amazing

Alter the Cake Mix Recipe

To make a moister cake replace the water with milk and the oil with melted butter. Those are just two of my favorite ways to make a boxed cake taste better. 

Optional Toppings For This Elvis Pudding Cake Recipe

Every bite of this pudding cake is fantastic! If you are like me, then you understand that sometimes it is fun to add in some extra ingredients. My husband and I like to try new things sometimes, and I thought you might like these ideas:

  • Whipped Cream – I know this dessert is already pretty sweet but isn’t everything better with a little dab of whipped cream? 
  • Candy Bars – Crush up your favorite candy bar and sprinkle a little bit on top or you can even add some in the cake. 
  • Caramel – Drizzle just a little bit on top of the ice cream because caramel goes with everything!
  • Nuts – Add some peanuts, almonds, cashews or any other nut to the top of the cake. I like the extra crunch they give. 
  • Bacon – Give the dessert one more touch of Elvis and add some chopped bacon to the op for the perfect mix of sweet & salty!

How Do I Store Leftover Pudding Cake?

If you have leftover pudding cake, you can store it in the refrigerator. While I love this cake when it is really warm, you will be surprised to know that it is also terrific cold. I skip the ice cream when I eat it cold, but it is seriously so good. While you can refrigerate the cake, I don’t really recommend putting it in the freezer. It doesn’t tend to age well, and the texture always seems to be a bit off. You can try it, and if you like it keep doing it, but I wouldn’t make a bunch just to freeze.
