Mickey Funfetti Cheesecake Minis are perfect for any Disney party whether you are having a Mickey Mouse cartoon marathon, birthday party, movie night, or announcing a Disney vacation. A sweet Nilla wafer crust with a tangy, sweet cheesecake sprinkled with Mickey Head sprinkles will have you reaching for more than one of these mini delights!

What You’ll Need to Make Mickey Mouse-Inspired Funfetti Cheesecake Minis

You will need a cupcake or muffin pan and I like using white cupcake liners if I am serving these at a party.

This recipe is made in two parts. The first part is the crust. For the crust you will need:

  • 1 1/4 C. Ground Nilla Cookies, about 14 cookies. The easiest way to make cookie crumbs is to use a food processor. You could also put them in a Ziploc bag and use a rolling pin to smash them.
  • 1/4 C. Sugar
  • 1/4 C. 1⁄4 C unsalted sweet cream butter, melted

For the Cheesecake you will need:

  • 2 – 8 oz cheesecake, softened
  • 1 C Funfetti cake mix
  • 2 tbsp sour cream
  • 1⁄2 C sugar
  • 2 large eggs
  • 3 C Mickey Mouse sprinkles, divided into 3 different amounts. The different amounts are 1 1/4 cup, 3/4 cup, and 1 cup. You can find these cute Mickey Mouse Head Sprinkles either at Walt Disney World or on Amazon. If you can’t get the exact sprinkles, just use a mixture of red, black, and white sprinkles to showcase Mickey Mouse colors. You could even add yellow to highlight Mickey’s shoes and buttons.

How to Make Mickey Funfetti Cheesecake Minis

Make sure to prep ingredients. Making a recipe is so much easier when all the ingredients are out and pre-measured. Plus, it helps you realize if you are missing anything before you get halfway into the recipe, please don’t ask how I know that, lol.

First, we are going to make the crust after we preheat the oven to 350 degrees.

  1. Line your cupcake/muffin pan with the cupcake liners.
  2. Take your cookie crumbs and sugar and whisk those together.
  3. Mix in the melted butter until a wet-sand texture is achieved.
  4. Take about 1/4 of the mixture and set it aside, we are going to use that in a different way later.
  5. Using a tablespoon, spoon about 1 1⁄2 Tablespoons of crust into the cupcake liners.
  6. Using a flat bottom cup, press the crust into a thick, even layer.

Set those crust pieces in the fridge and let’s make the creamy cheesecake filling with those fun sprinkles!

  1. Using a large bowl and hand beaters, beat the cream cheese, cake mix, sour cream, vanilla extract, and sugar until combined.
  2. Beat eggs into the batter, 1 egg at a time.
  3. Fold in 1 1⁄4 C of the Mickey Mouse sprinkles into the cheesecake batter. Be very gentle with this, if you mix too much the coloring will bleed into the mixture.
  4. Spoon about 2 1⁄2 – 3 tbsp of cheesecake batter into the cupcake liners.
  5. Sprinkle some of the crust that was set aside earlier, on top of the batter.
  6. Using 3⁄4 C of sprinkles, sprinkle some on top of the cheesecake batter.
  7. Bake in the oven for about 20 minutes or until the middle has set.
  8. Allow to cool for 30 minutes on the counter before removing the cheesecake from the pan and into the fridge to continue to cool overnight.
  9. Top with fresh whipped cream and more sprinkles.

Ingredients

Crust Ingredients

  • 1 1⁄4 C ground Nilla cookies
  • 1⁄4 C sugar
  • 1⁄4 C unsalted sweet cream butter, melted

Funfetti Cheesecake Ingredients

  • 2 - 8 oz cheesecake, softened
  • 1 C Funfetti cake mix
  • 2 tbsp sour cream
  • 1⁄2 C sugar

  • 3 C Mickey Mouse sprinkles, divided
  • Fresh whipped cream

Instructions

  1. Preheat oven to 350 degrees and line the cupcake/muffin pan with the white cupcake liners
  2. Using a food processor or ziplock bag and rolling pin, grind up the Nilla cookies until finely crushed into sand-like
  3. Pour into a bowl and whisk the sugar into the ground Nilla cookies
  4. Mix in the melted butter until a wet sand-like mixture forms, remove 1⁄4 C of the crust into another bowl
  5. Using a tablespoon, spoon about 1 1⁄2 tablespoon of crust into the cupcake liners
  6. Using a flat-bottomed cup, press the crust into a thick even layer
  7. Using a large bowl and hand beaters, beat the cream cheese, cake mix, sour cream, vanilla extract, and sugar until combined
